Bang Bang Chicken Stir Fry

Prep time: 20 Minutes Cook time: 20 Minutes Total time: 40 Minutes Servings: 4

Ingredients:

Chicken Stir Fry

  • 2 pounds boneless chicken breasts

  • 1/2 cup soy sauce

  • 2 Tbsp honey

  • 1 Tbsp ground ginger (or fresh)

  • 1 Tbsp sesame oil

  • 4 cloves of garlic, minced

  • arrow root starch to thicken

  • red pepper flakes, to taste

Bang Bang Sauce

  • 1/2 cup mayo

  • 1/4 cup sweet chili sauce (I use Trader Joes)

  • optional: siracha for a little heat

Veggies

  • 1/2 yellow onion, diced

  • 1 red bell pepper, diced

  • 2 zucchinis, chopped

Instructions

Make the stir fry sauce:

  1. Add soy sauce, honey, ginger, sesame oil, garlic, starch and red pepper flakes to a bowl and whisk until fully combined.

  2. Cut the chicken into bite-sized pieces and use half of the stir fry sauce to marinate the chicken with. Chicken should marinate for at least 30 minutes.

  3. Set aside the other half of the sauce for the veggies.

Prep your veggies: 

  1. While the chicken marinates, dice/ chop the zucchini, bell pepper and onion.

  2. Set aside until ready to cook.

Make the bang bang sauce:

  1. In a bowl, combine the mayo and chili sauce and stir until fully combined. Adjust ingredients to desired taste.

Make the chicken and veggies:

  1. Add the chicken to a sauce pan over medium heat with a tablespoon of sesame oil.

  2. cook until cooked through - about 7-10 minutes.

  3. In a separate pan, add your veggies over medium heat with a tablespoon of sesame oil.

  4. Once veggies are about half way there, add the remaining stir fry sauce and saute until fully cooked down.

  5. Add chicken and veggies to a bowl, top with bang bang sauce and serve with rice.
