Greek-Inspired Shrimp Scampi

Ingredients:

Sauce

  • 1/2 cup feta cheese

  • 4 cloves of garlic

  • 3 Tbsp butter

  • juice of 1 lemon

  • 1/2 cup dry white wine

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup heavy cream

  • 1 tsp red pepper flakes

  • 1 tsp dried oregano

  • 1 tsp dried parsley

Shrimp

  • 1 lb large shrimp

  • salt and pepper

Toppings

  • fresh dill, chopped

  • feta cheese

Instructions

Cook the shrimp: 

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.

  2. Add shrimp, season with salt and pepper, and cook for 1–2 minutes per side until pink. Remove and set aside.

Make the sauce:

  1. In the same pan, add butter, garlic, and cherry tomatoes. Sauté for about 45 seconds until fragrant. Add red pepper flakes, lemon juice, and dry white wine. Let it simmer for 2–3 minutes.

  2. Lower the heat and stir in heavy cream and feta cheese. Let the feta melt slightly into the sauce, creating a creamy, tangy base.

  3. Add the shrimp back to the skillet along with oregano and parsley. Toss to coat everything in the sauce and warm through

  4. Serve over pasta topped with extra feta and fresh dill.
